OK girls - I'm wanting to make those yummy creamy chicken enchiladas that we've had when we've all gotten together before (I think they're a junior league recipe?). The last time I remember having them was at Mike & Lindsey's place in McKinney, I think when Barry & Jessica were in town, and I think that Rebekah or Susan made them... SO, I emailed Bek for the recipe, but I have no patience, so if anyone has the recipe, PLEASE post it.

well i make some like this...boil chicken, dice and set aside. make a cream sauce melt butter add diced onions til soft stir in flour and chicken broth add some cream cheese and green chiles. roll up torillas with chicken and some sauce (i like white corn but most recipes call for flour) line up in casserole dishsave some sauce for the top and sprinkle mexican blend cheese on top! might not be the recipe you are looking for but they are good and the freeze well (it seems like bekah has a recipe with mushroom soup that may be easier)

bekah emailed me back, and here's the recipe she gave me:
Creamy Chicken Enchiladas
1 tbsp. butter
½ cup onion, chopped
1 (4.5 oz) can chopped green chilies, drained
1 (8 oz.) pkg cream cheese
3-4 boiled, shredded chicken
8 tortillas
2 (8oz.) pkg. Mont. Jack cheese
1 (16 oz.) carton whipping cream
Melt butter in skillet and sauté onion and chilies. Stir in cream cheese until melted, add cooked chicken. Spoon mixture into tortillas and roll up and place seam side down in 9x13 casserole dish. Sprinkle cheese over tortillas and drizzle whipping cream over top. Cover with foil and Bake @ 350 for 45 minutes.
Yum! I might have to make these tonight.
